Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed cardboard covering nonfood contact surfaces under grill, under the counters, and under dry storage area in Lucky Ket. Observed unfinished wood being used as a divider in the Lucky Key kitchen. CA: (i) Nonfood-contact Surfaces. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Discussed with PIC that the food must be finished will epoxy resin or a similar material to make it washable. The cardboard boxes must be removed and discarded. Metal or hard non-porous plastic can be used to cover areas instead.
