Nonfood-contact surfaces clean — Inspector Note: Observed the interior of the milk reach-in cooler in the front service area to be unclean, with visible residue and buildup. Observed the interior of the toaster oven, including food-contact surfaces, to be unclean with visible food debris. Observed food and other visible debris accumulated underneath the bagging station. Observed salt and dust buildup on the sides of the coffee machine and frozen beverage machine. Observed visible food debris inside the McFlurry machine. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Hands clean and properly washed — Inspector Note: Observed an employee hand an order to a customer outside, return inside, take an order at the register, and then retrieve and provide the order to the customer. Also observed a staff member handle raw patties and then touch the grill buttons without changing gloves. The person in charge was advised that gloves used to handle raw items should only be used for raw food and must be removed before touching any non-food-contact surfaces. CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles. During food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks; When switching between working with raw food and working with ready-to-eat food. Before donning gloves to initiate a task that involves working with food.

Food stored covered — Inspector Note: Observed an opened bag of hash browns in the walk-in freezer. The hash browns were sitting exposed on top of the box. CA: storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. COS: hash browns were voluntarily discarded.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed the drink machine and dispensing nozzles with visible buildup and residue. Observed black organic substance underneath soda lids. Equipment was not maintained in a clean and sanitary condition.
