Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed cutting boards that were heavily stained and with gashes. CA- cutting boards that are not in good condition shall be discarded or resurfaced. 511-6-1.05(6)(b) - Cutting Surfaces (C) (b) Cutting Surfaces. Proper cold holding temperatures — Inspector Note: Observed the WIC unable to maintain TCS foods under 41F and below at the time of the inspection. COS- food was discarded and PIC was advised not to use the WIC until it is repaired as all thermometers were reading 45F. Observed splatter on the walls throughout the kitchen. Observed black/ dust buildup on the ceiling in the main kitchen and observed the cove basing not in good repair.
