Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed three compartments sink in the main kitchen that was dispensing too high of a sanitizer concentration (400 PPM). CA advised PIC to have Ecolab come out and adjust the sanitizer levels to meet the appropriate levels required.
