Variance obtained for specialized processing methods — Inspector Note: Observed reduced oxygen packaging without the proper government approval. CA advised PIC to stop this practice until approval is obtained.

Compliance with variance, specialized process and HACCP plan — Inspector Note: Observed Octopus that had been reduced oxygen packaged in the walk-in cooler in the main kitchen. CA advised PIC that they must have required government approval in order to reduce oxygen package, took their email to get them in contact with the appropriate people.

Personal cleanliness — Inspector Note: Observed employee working prepping vegetables with several string and silver bracelets on. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. CA/ employee remove jewelry
