COS: PIC removed the trash can. Using a Handwashing Sink. 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf 2. Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed no sanitizer solution in the kitchen sanitizer buckets, and very low concentration of sanitizer in the bar dishwashing machine. COS/CA: PIC prepared fresh sanitizer solution at the proper concentration and replaced all sanitizer buckets; PIC called dish-machine provider for service and in the mean time, the bar will use the 3-compartment sink at the bar for sanitizing. 3. Chemical manual or mechanical operations, including the application of sanitizing chemicals by immersion, manual swabbing, brushing, or pressure spraying methods, using a solution as specified under subsection (6)(n) of this Rule.
