Observed container of mushrooms date marked as 3/5 in walk in cooler. (h) Ready-to-Eat, Time/Temperature Control for Safety Food, Disposition. 1. A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P (ii) Is in a container or package that does not bear a date or day; P or (iii) Is inappropriately marked with a date or day that exceeds 7 days . P PIC discarded food item. EHS advised PIC to ensure employees are properly date marking food items and handwriting is legible.
Food properly labeled; original container — Inspector Note: Observed vegetable and food sinks are not labeled. 511-6-1.07(4)(c) - Segregation, distressed food segregated and properly located (Pf) (c) Segregation and Location. Products that are held by permit holder for credit, redemption, or returned to the distributor, such as damaged, spoiled, or recalled products, shall be segregated and held in designated areas that are separated from food, equipment, utensils, linens, and single-service and single-use articles. PIC will ensure that sinks are labeled.

The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away.
Nonfood-contact surfaces clean — Inspector Note: Observed heavy residue on kitchen equipment and countertops. 511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will clean and keep clean.
