Thermometers provided and accurate — Inspector Note: Observed no thermometers inside of several reach in coolers and freezers in the main kitchen and basement. CA advised PIC to place thermometers inside all refrigeration in order to keep track of internal ambient temperatures.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed chemical dish machine and three compartments sink not dispensing sanitizer at the required level. CA advised PIC to cease the use of the dish machine and three compartment sinks until maintenance is able to come and adjust the levels of concentration for proper sanitization.

Observed Ice machine with black mold-like substance on the interior walls.CA Instructed PIC to implement a regular cleaning routine for both the soda gun nozzles and ice machine in order to prevent the accumulation of residue and debris.
