Must thaw ROP fish out of the package. Must thaw under refrigeration, 70F or less running and draining water, or part of the cooking process. PIC removed fish from ROP packaging and moved to cooler.
In-use utensils: properly stored — Inspector Note: Observed knives stored on top shelf of prep between counter and cardboard. Must store in-use utensils on a surface that can be properly cleaned/sanitized.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee belongings throughout establishment in coolers, open cup and phone in prep area, and hanging on dry storage shelving. Must designate an area and maintain employee items below/away from food and food prep.
