2 recorded inspectionsGarbage/refuse properly disposed; facilities maintained — Inspector Note: Observed failure to dispose of trash in main kitchen to prevent against harbor of insects and pests. Observed a buildup of chicken boxes and dirty trays near the main kitchen exit door. 511-6-1.06(5)(r),(s) - Frequency, removal of refuse, recyclables and returnables often enough to minimize odors and attracting pests; Receptacles or Vehicles, removal from premises in approved manner (C) (r) Frequency. Refuse, recyclables, and returnables shall be removed from the premises at a frequency that will minimize the development of objectionable odors and other conditions that attract or harbor insects and rodents. PIC removed trash from premises.
Contamination prevented during food preparation, storage, display — Inspector Note: Observed in walk-in cooler raw chicken stored above ready to eat chicken. Observed also raw chicken liquid dripping on boxes of food beneath it. 511-6-1.04(4)(z) - Miscellaneous Sources of Contamination (C) (z) Miscellaneous Sources of Contamination. Food shall be protected from contamination that may result from a factor or source not specified under paragraphs (a) through (y) of this subsection. PIC instructed to rearrange and to stop filling raw chicken in a container to avoid accumulation of chicken fluid dropping and contaminating boxes of food and floor.
Nonfood-contact surfaces clean — Inspector Note: Observed wet floor throughout the kitchen and in walk in cooler. Observed raw prepped chicken in several containers leaking water on the flow and ready to eat chicken in the boxes stored beneath them. Observed buildup of debris in reach in cooler and reach in door outside of microwave and dry storage container. Non-food contact surfaces of equipment shall be clean to reduce residue. PIC will have all equipment cleaned. PIC instructed to re-arrange stacking and drain water on the floor.
Physical facilities installed, maintained, and clean — Inspector Note: Observed ice buildup in walk-in freezer door, wall and ceiling. 511-6-1.07(5)(a),(b) - Good Repair, physical facilities maintained; Cleaning, Frequency & Restrictions, cleaned often enough to keep them clean (C) (5) Maintenance and Operation. (a) Good Repair. All physical facilities shall be maintained in good repair. PIC advised to place a work order to to be looked at.
