1 recorded inspectionFood and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed bottom shelves of prep tables lined with aluminum foil and on some tables this was peeling. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. The PIC will remove this is maintain and smooth and easily cleanable surface.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed broken flooring in walk in cooler. Observed broken door paneling on walk in freezer. Good Repair and Proper Adjustment. 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. 2. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. PIC shall have this repaired.
Certified Food Protection Manager — Inspector Note: Observed expired food safety manager certificate. Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. Facility has 60 days to obtain a new CFSM.
Food in good condition, safe, and unadulterated — Inspector Note: Observed several severely dented cans in the dry storage area. Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Advised PIC to discard these cans.
Proper date marking and disposition — Inspector Note: Observed multiple TCS items held in the walk in coolers with date labels of August. . A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P (ii) Is in a container or package that does not bear a date or day; P or (iii) Is inappropriately marked with a date or day that exceeds 7 days The PIC discarded these items.
