CA: Advised PIC foods should be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Cos: PIC loosely covered food.
Approved thawing methods used — Inspector Note: Observed three rolls of beef being thawed at room temperature on the counter. CA: Advised PIC food shall be thawed under refrigeration that maintains the food temperature at 41°F (5°C) or less or completely submerged under running water at a water temperature of 70°F (21°C) or below.
