COS: PIC turned down cooler and will monitor temperature throughout the day.(f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Menu items that may be served raw and undercooked such as sushi did not include the required disclosure reminding consumers of the increase risked of consumption. CA PIC was informed that a consumer advisory must be included on the menu for all items that may be served raw and undercooked.

Time as a public health control: procedures and records — Inspector Note: Observed potentially hazardous food (Cooked white rice, cooked brown rice, cooked chicken) held under time as a public health control without time marking indicating 4-hour limit. COS: PIC placed time stamps on food items. 1. Except as specified under paragraph 4 of this subsection, if time without temperature control is used as the public health control for a working supply of time/temperature control for safety food before cooking, or for ready-to-eat time/temperature control for safety food that is displayed or held for sale or service, written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the regulatory authority upon request that specify: Pf (i) Methods of compliance with paragraphs 2(i) - (iv) or 3(i) through (v) of this subsection; and (ii) Methods of compliance with the cooling of time/temperature control for safety food that is prepared, cooked, and refrigerated before time is used as a public health control. Pf 2. Management knowledge, responsibilities, reporting — Inspector Note: Observed failure to provide Employee Agreements upon request. Establishment must have signed Employee Reporting Agreements for all employees upon request. Person in charge/CFSM given copy of Employee Reporting Agreement to have completed.
Proper eating, tasting, drinking, or tobacco use — Inspector Note: Observation multiple non-single use beverage container was observed stored in the main kitchen area.
Response procedures for vomiting & diarrheal events — Inspector Note: Observed failure to provide procedures on how to deal with a contamination event upon request. Facility must have established procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. Person in charge/CFSM given copy of V/D cleanup procedures.
