Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed wet, recently washed food containers being dried stacked on top of each other preventing proper air-drying. CA: Informed PIC that after cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food. COS: PIC unstacked food containers so that they may properly dry.

Proper cold holding temperatures — Inspector Note: Observed several food items (Pork 52, Sausage 58F and Beef 50 Ambient 48 F) all cold held in the Walk In cooler above 41F. Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC was advised to put all foods above 41F on ice.
