Proper cold holding temperatures — Inspector Note: observed salmon in hot box holding at temperature 111F and 120F CA: PIC immediately returned items to over to bring to 165 and above.
Proper date marking and disposition — Inspector Note: Observed open package of pepperoni found stored past disposal date marked (marked with prep date 1/13/26 discarded date 1/17/26). CA instructed PIC to dispose of pepperoni. A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; P (ii) Is in a container or package that does not bear a date or day; P or (iii) Is inappropriately marked with a date or day that exceeds 7 days .
