Personal cleanliness — Inspector Note: Observed several staff members prepping food while wearing jewelry (watch, bracelets). CA: 511-6-1.03(5)(g) - Jewelry (C) (g) Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food.
Food stored covered — Inspector Note: Observed food containers in the reach in cooler stored without proper coverings (curry chicken, curry goat, veggies etc.). COS: Advised PIC to cover all food containers immediately
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed ice machine with brown build up on the deflector plate. CA: Cleaning of Equipment and Utensils. Proper date marking and disposition — Inspector Note: Observed failure to discard chicken after 7 days. COS: Food in question was discarded. A food that requires datemarking shall be discarded if it: Exceeds 7 days, not including the time that the product is frozen; Is in a container or package that does not bear a date or day; Is appropriately marked with a date or day that exceeds 7 days . P
Proper date marking and disposition — Inspector Note: Observed failure to properly date mark food that was stored in the RIC of the main kitchen cooking line. COS: Chef placed datemarking on the food found.
Food-contact surfaces: cleaned & sanitized — Inspector Note: During the routine inspection EHS observed the can opener with large amounts of buildup on the blade as well as the holder it is housed in. Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC immediately had the can opener clean.
Insects, rodents, and animals not present — Inspector Note: During routine inspection observed cockroaches near the dish area, prep area, and dining area. Manager called pest services during inspection.
Response procedures for vomiting & diarrheal events — Inspector Note: Establishment does not have established procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. COS: emailed sample procedure to mgr. CA: put in place an acceptable policy and provide single use cleaning supplies. EHS has emailed the establishment procedures for cleaning up bodily fluids with bleach
Food in good condition, safe, and unadulterated — Inspector Note: During the routine inspection EHS observed a dented can on the rack that showed to have leaked in the main kitchen. COS: EHS made PIC discard the can to monitor cans upon receiving. Package Integrity. Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants
Food stored covered — Inspector Note: Observed food containers in both the walk in cooler and ric's stored without proper coverings (raw chicken, raw shrimp, sauces etc.). CA: Advised PIC to cover all food containers immediately
Proper cold holding temperatures — Inspector Note: Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Observed 46 degrees f for chicken and tofu cheese and 48 degrees f ambient air for unit. COS: PIC discarded the chicken that was out of temp. Small prep cooler in main kitchen area must keep TCS foods 41 or below. Discard any foods kept there over 4 hours.
