Food properly labeled; original container — Inspector Note: During the routine inspection EHS observed several containers without proper labeling. Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. COS: discarded items without the proper labeling on containers

Food stored covered — Inspector Note: Observed several food containers (containing cooked chicken wings, raw chicken strips, brussels sprouts and more) in both the walk in cooler and ric's stored without proper coverings (raw chicken, raw shrimp, cooked rice). CA: Advised PIC to cover all food containers immediately

Food-contact surfaces: cleaned & sanitized — Inspector Note: During the routine inspection EHS observed the ice machine needs to be clean and sanitized and there was some presence of pink slime and black substance build up. CA: PIC was advised to have the units cleaned and sanitized Equipment food-contact surfaces and utensils shall be clean to sight and touch.

COS : manager disregarded food item.
