Physical facilities installed, maintained, and clean — Inspector Note: Observed food residue and debris on floors and walls near 3-compartment sink in main kitchen area and on floors beneath shelving units in walk-in cooler. Corrective action - PIC advised to perform detailed cleaning in these areas. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
