2 recorded inspectionsAdequate ventilation and lighting; designated areas used — Inspector Note: Observed one light cover that was cracked and another with exposed light tubes and no light cover. light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service and single-use articles.
Insects, rodents, and animals not present — Inspector Note: Observed significant hole at bottom left and upper left corners of door. Doors must be solid, self-closing, tight-fitting
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed 0ppm sanitizer (chlorine) in dish machine and 0ppm sanitizer (quat) in 3 compartment sink. Must maintain chlorine and quat in manufacturers recommended range.
Proper cold holding temperatures — Inspector Note: Observed cold holding unit across from grill holding beef at 54F and a second container of beef at 58F. PIC informed that it was prepped more than 4 hours ago. PIC advised to discard both.
Proper hot holding temperatures — Inspector Note: Observed chicken hot held at 76F and lamb hot held at 107F. Must hot hold 135F or hotter. PIC discarded chicken and reheated lamb to 182F to hot hold properly.
Nonfood-contact surfaces clean — Inspector Note: During inspection observed grill equipment and grill vents heavily soiled with old food debris and grease accumulation. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. PIC advised to clean vents and grill area using a SOP for routine maintenance. 511-6-1.05(7)(a)2,3 - Equipment, Food/Nonfood-Contact Surfaces, and Utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (C) 2. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. 3. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee belongings stored on an unmarked shelf with no way to differentiate between employee food and customer food. CA- PIC will label employee belongings shelves for food and personal items. 511-6-1.07(3)(h) - Dressing Areas and Lockers, designated and provided (C) (h) Dressing Areas and Lockers 2. Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions.
