Thermometers provided and accurate — Inspector Note: Observed a lack of thermometers in several reach in and walk in coolers in the main kitchen, preventing proper monitoring of internal ambient temperatures. CA advised PIC to place thermometers in all cold holding units.

Physical facilities installed, maintained, and clean — Inspector Note: Observed heavy ice buildup on the floor, jamb and door of the walk in freezer. Observed buildup on the wall panels and drop ceiling tiles. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. PIC shall have the physical facilities cleaned.
