Plumbing installed; proper backflow devices — Inspector Note: Observed plumbing leak at prep sink in main kitchen area. Corrective action - PIC advised to have necessary repairs performed on plumbing fixtures. Observed no hot water available at sinks (3-compartment sink, prep sinks, handwashing sinks). Corrective action - PIC reported hot water heater had been turned off. PIC restored hot water heater to operation for kitchen area. 511-6-1.06(2)(r) - System Maintained in Good Repair (P, C) (r) System Maintained in Good Repair. A plumbing system shall be repaired according to law; P and maintained in good repair.

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed no hot water available at hand washing sink in main kitchen area. Corrective action - PIC advised to repair and restore hot water service to kitchen area. 511-6-1.06(2)(c) - Handwashing sinks, Installation (Pf, C) (c) Handwashing Sink Installation. 1. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet. Pf 2. A steam mixing valve may not be used at a handwashing sink. 3. A self-closing, slow-closing, or metering faucet shall provide a flow of water for at least 15 seconds without the need to reactivate the faucet. 4. An automatic handwashing facility shall be installed in accordance with manufacturer’s instructions.

Certified Food Protection Manager — Inspector Note: Observed the facility does not have a certified food safety manager on staff. Observed no certificate displayed. Corrective action - PIC advised that he has begun the certification course and will complete it and post his certificate as soon as possible. 511-6-1.03(3)(a) - Food Safety Manager Certification Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection.
