Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed at the time of inspection 3 compartment “sanitizer” sink not dispensing any sanitizer solution. PIC manually filled 3rd compartment of sink with sanitizer and water to the appropriate concentration and will call facility to fix sanitation line. 511-6-1.05(2)(cc) - Warewashing, Automatic Dispensing of Detergents and Sanitizers (Pf) (cc) Warewashing Machines, Automatic Dispensing of Detergents and Sanitizers. Thermometers provided and accurate — Inspector Note: Observed ambient air thermometer was not located in the warmest/coolest part of the holding unit. 1. In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. PIC will ensure that thermometers are placed in fridges and warmers.
