Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. PIC put on a hat.
Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed failure to have the most recent inspection report posted inside facility for public viewing. Observed a prior inspection being posted. 511-6-1.02(1)(d) - Displaying of the Inspection Report (C) 1. The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. PIC advised to post the inspection report from today’s inspection.
Proper date marking and disposition — Inspector Note: Observed failure to date mark ready-to-eat food items in walk in cooler. Observed containers of chopped onions, rice, and vegetables with no date marking. 511-6-1.04(6)(g) - Ready-To-Eat Time/Temperature Control for Safety Food, Date Marking (Pf) (g) Ready-to-Eat Time/Temperature Control for Safety Food, Date Marking 1. Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 5 and 6 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. Pf PIC advised to date mark food items with day they were prepped.
Nonfood-contact surfaces clean — Inspector Note: Observed dirt buildup on the floor of the walk in freezer. 511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC will need to keep facility clean.
Proper cold holding temperatures — Inspector Note: Observed potentially hazardous cold foods (sliced tomato at 46 f, lettuce at 46 f, raw chicken at 45 f, and raw shrimp at 45 f)oin walk-in cooler held greater than 41 degrees Fahrenheit. 511-6-1.04(6)(f): When time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. CA: PIC was advised that TCS food shall be cold held at 41 degrees Fahrenheit or below. COS: PIC moved all foods that were out of temperature into another cooler.
