Nonfood-contact surfaces clean — Inspector Note: Observed build up of food soil debris along the exterior of ice machine & in the vicinity of reach in cooler unit. CA: Advised pic Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
Plumbing installed; proper backflow devices — Inspector Note: Observed hand sink with backed water from slow drain with leaking pipes. CA: Advised PIC to have sink serviced.
Certified Food Protection Manager — Inspector Note: Observed CFSM certificate expired. CA - . Certified Food Safety Managers must be designated to one food service establishment only and maintain and renew certification in accordance with the requirements of the examination taken.
Hands clean and properly washed — Inspector Note: Observed PIC washing hands in a 3 compartment sink. CA- advised pic that facility employees must use a designated handwashing sink for washing hands only. Also to wash hands more often after a change of duties and touching personal items.
Food in good condition, safe, and unadulterated — Inspector Note: Observed deli turkey meat in RIC of main kitchen that was kept after date to be thrown out. CA: Advised PIC that perishable food items should be thrown out when it is dated to be expired.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed ice machine with built up debris as well as the ice scoop stored in residue water. Ca: All food contact surfaces shall be cleaned to sight and touch.
Proper cold holding temperatures — Inspector Note: Observed deli turkey, deli ham, and shelled eggs held at a temperature above 41F or below. CA: advised PIC to discard items and to use another fridge to hold items going forward if RIC cannot be fixed. Time/temperature control for safety food shall be cold held at 41F or below. COS: PIC discarded items.
Wiping cloths: properly used and stored — Inspector Note: Observed wet wiping cloths in main kitchen not stored in sanitizer bucket in between use. CA: PIC advised to place wet cloths in a sanitizer bucket and that cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1.05 (6)(n); and laundered daily.
