Item 12C Good Retail Practice

Wiping cloths: properly used and stored — Inspector Note: Observed several wet wiping cloths stored on top of the ice cream freezers in the main kitchen. 2. Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. Wiping cloths are to be kept in a sanitizer solution, in-between uses. Wiping cloths were removed from on top of the ice cream freezers in the main kitchen.

Item 15B Good Retail Practice

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Quat test strips for the 3 compartment sink were not observed during the inspection. PIC was informed that: Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Pf CA: proper test strips should be obtained and should be used in order to check the quat sanitizer.

Nonfood-contact surfaces clean — Inspector Note: Observed accumulation of food debris and apparent mold-like growth on the floor and exterior surfaces of closed food containers throughout the walk-in cooler. Clean and maintain the walk-in cooler and food containers to prevent accumulation of food debris. PIC was informed that: d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed a heavy buildup of a black mold-like residue on the interior of the ice machine. Informed PIC that: a) Equipment, Food-Contact Surfaces, and Utensils. 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. Use of the ice machine is to stop until the ice machine has been emptied and cleaned.
