Item 15C Good Retail Practice

Nonfood-contact surfaces clean — Inspector Note: Observed heavy accumulation of grease and other food debris all over the reach in cooler doors under the prep top cooler of the main kitchen. Observed heavy grease and food debris buildup on table where the rice cooker sat. CA: PIC informed that nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Adequate ventilation and lighting; designated areas used — Inspector Note: Upon entering the main kitchen observed poor lighting in the middle section of the kitchen where the handwashing sink, walk-in cooler, and rice cooker are located. CA: PIC was informed that (f) Lighting Intensity. The light intensity shall be: 1. At least 10 foot candles (108 lux) at a distance of 30 inches (75 cm) above the floor, in walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning; COS: Bulb was tightened to provide adequate lighting.

Insects, rodents, and animals not present — Inspector Note: Observed dead roach on the floor in the dining room area. Observed 2 spiders and spider webs in and around handwashing sink and 2 sinks not in use. Observed multiple small and large German roaches in the 2 sinks that are not in use. Observed roach walking on table where the rice cooker sat. CA: Controlling Pests. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; 3. Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; Pf and 4. Eliminating harborage conditions.

Response procedures for vomiting & diarrheal events — Inspector Note: PIC could not provide details or proof during the inspection that a proper cleanup procedures would be utilized for responding to a vomiting or diarrheal event in the establishment. CA: A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter.Pf COS: Cleanup procedures were provided to PIC.

Food properly labeled; original container — Inspector Note: Food items in storage containers were not identified with the common name of the food item . PIC labeled all containers with common name of food. 511-6-1.04(4)(d) - Food Storage Containers Identified with Common Name of Food (C) (d) Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed handwashing sink by 3 compartment sink not accessible. Observed water hose head stored in handwashing sink by mop sink. PIC made HWS accessible, removed stored item, and was advised to ensure all HWS are accessible and used only for Handwashing. 511-6-1.06(2)(o) - Using a Handwashing Sink- Operation & maintenance (Pf) (o) Using a Handwashing Sink. 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf 2. A handwashing facility may not be used for purposes other than handwashing. Pf 3. An automatic handwashing facility shall be used in accordance with manufacturer’s instructions. Pf
