Proper date marking and disposition — Inspector Note: Observed a few food items in the WIC that exceeded the allowed 7days for storing. COS: PIC discarded the food. A food that requires datemarking shall be discarded if it: Exceeds 7 days, not including the time that the product is frozen
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed multiple knives on the magnetic wall holder that showed to have been used before shelving. CA: PIC was advised to not store knives before they are cleaned. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
