Contamination prevented during food preparation, storage, display — Inspector Note: Observed several items in the dry storage area and walk in cooler being stored directly on the floor (oil, can good items) advised PIC to place items at least 6 inches off floor to prevent contamination

Food properly labeled; original container — Inspector Note: Observed several food containers with common names. I advised the manager to label all food the food containers and he did. 511-6-1.04(4)(d) - Food Storage Containers Identified with Common Name of Food (C) (d) Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

Physical facilities installed, maintained, and clean — Inspector Note: Observed the main kitchen floor was not maintained clean. They had soup and different stains all over the kitchen. I advised the manager to maintain the cleanliness of the kitchen. 511-6-1.07(2)(a) - Floor, Walls, & Ceilings, Cleanability (C) (2) Design, Construction, and Installation. (a) Floors, Walls, and Ceilings, Cleanability.
