Physical facilities installed, maintained, and clean — Inspector Note: Observed dust accumulation on ceiling vents in the dry storage area. Observed food splatter on wall and floor and food debris under shelving in the dry storage area. Observed grease buildup on floor of main kitchen area near cooking equipment. Corrective action - PIC advised to perform detailed cleaning of floors, walls, and ceilings cleaning under and behind equipment and shelving. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
