Thermometers provided and accurate — Inspector Note: Observed lack of thermometers in several reach in coolers and reach in freezers in the main kitchen. CA advised PIC to place thermostats in all cold holding units in the facility in order to ensure accurate measurement of ambient temperatures.

Response procedures for vomiting & diarrheal events — Inspector Note: Observed no procedure in case of a vomit or fecal incident. A food establishment shall have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Pf PIC was provided with a norovirus procedure.
