Proper eating, tasting, drinking, or tobacco use — Inspector Note: Observed reusable cups in main kitchen. CA advised PIC only single use cups can be used. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.

Proper cold holding temperatures — Inspector Note: Observed several TCS foods stored in a Prep-top cooler and RIC with internal temp higher than 41 F. (CA) Advised the PIC that TCS food needs to be stored at temps of 41 F or lower. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below

Food properly labeled; original container — Inspector Note: observe rice bins in the main kitchen perp area without common name labels on them. COS: PIC managed to put labels on the bins that holds rice.

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: During the routine inspection EHS observed the plastic containers were stacked on top of each other while still wet. CA: PIC was informed that they shall be air-dried or used after adequate draining before contact with food
