Cos by placing above 6 inches off floor. 511-6-1.04(4)(q) - Food Storage (C) (q) Food Storage. 1. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor.
In-use utensils: properly stored — Inspector Note: Observed multiple utensils stored in still water under 135 (at 82) degrees F. 511-6-1.04(4)(k) - In-Use Utensils, Between-Use Storage (C) (k)Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored:6. Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed cooked food being cooled at room temperature. Food shall be cooled inside a cooler or ice bath. Explained the cooling process to the PIC.
In-use utensils: properly stored — Inspector Note: Observed failure to properly store in-use utensils. In-use utensils shall be stored in a cold running water or stagnant water at 135 degrees or above. Explained the process to the PIC.
Insects, rodents, and animals not present — Inspector Note: Observed the presence of flies at the bar and main kitchens. PIC provided a pest control receipt date January 2026. Advised PIC to ensure that pest control services address the presence of gnats.
Food stored covered — Inspector Note: Observed failure to cover hot and cold foods on the prep top coolers at the main kitchen. Food on display shall be covered to prevent environmental contamination. Advised PIC to cover food.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed heavy slimy mold-like build up inside the ice machine at the main kitchen. Food contact surfaces shall be cleaned and sanitized after use. Advised PIC to cease using ice from the ice maker, clean and sanitize it before reuse.
