3 recorded inspectionsProper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed beef on the counter top cooling after being shaved. COS: PIC placed the beef that was shaved into a shallow pan into the WIC. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; Pf (ii) Separating the food into smaller or thinner portions; Pf (iii) Using rapid cooling equipment; Pf (iv) Stirring the food in a container placed in an ice water bath; Pf (v) Using containers that facilitate heat transfer; Pf (vi) Adding ice as an ingredient; Pf or (vii) Other effective methods. Pf 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
Food stored covered — Inspector Note: Observed frozen food (French fries, falafel etc.) stored without covering. COS: PIC place lids over the food containers. Adequate ventilation and lighting; designated areas used — Inspector Note: During inspection observed employee phone and charge stored on prep table. 511-6-1.07(4)(b Areas designated for employees to eat, drink, and use tobacco shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.COS: Employee removed personal items.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed grill with grease build up. CA: Advised PIC to have grill cleaned and serviced. Exhaust ventilation hood systems in food preparation and warewashing areas, including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles. Vent hood, filters , and facility vents extremely soiled with grease deposits and dust.
