Variance obtained for specialized processing methods — Inspector Note: Observed sous vide cooking with no variance obtained. CA: Advised PIC to provide the health department with a statement of the proposed variance of the Chapter requirement citing relevant rule and subsection numbers; An analysis of the rationale for how the potential public health hazards and nuisances addressed by the relevant rules and subsections will be alternatively addressed by the proposal; A HACCP plan if required that includes the information specified under DPH Rule 511-6-1-.02 (6) as it is relevant to the variance requested.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the cover for all of the prep top units in the main kitchen not intact via their hinges. CA: Advised PIC to ensure food contact equipment are maintained in good repair to prevent contamination.
