2 recorded inspectionsPhysical facilities installed, maintained, and clean — Inspector Note: Observed food splatter on walls and ceilings in the main kitchen area. Corrective action - PIC advised to perform detailed cleaning of floors, walls, and ceilings throughout the kitchen. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
Proper cold holding temperatures — Inspector Note: Observed numerous TCS food items held above 41*F in the walk-in cooler and reach-in coolers near cooking equipment. Corrected on site - Items discarded or placed in ice baths to cool if appropriate. Repairman was on site during inspection working on walk-in cooler and reach-in coolers to return them to proper functionality. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above.
Single-use/single-service articles: properly stored, used — Inspector Note: Observed single-service containers not inverted during storage or covered to protect the food-contact surfaces. Corrected on site - PIC covered containers. Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented.
Nonfood-contact surfaces clean — Inspector Note: Observed food debris and residue at base and exterior of coolers and large kitchen equipment. Corrective action - PIC advised to perform detailed cleaning of kitchen equipment. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
Food stored covered — Inspector Note: Observed several food items and containers of spices uncovered in reach-in coolers and near cooking equipment in kitchen area. Corrective action - PIC advised to store all foods covered with lids or wrapping for protection from contamination. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination;
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed dark spots on the interior of the bulk ice machine in the main kitchen area. Corrective action - PIC advised to clean ice machine more frequently than the bimonthly current schedule. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
