2 recorded inspectionsContamination prevented during food preparation, storage, display — Inspector Note: Observed food items (buckets of soy sauce stored in walk-in cooler, boxes of dry noodles in hallway) stored directly on the floor. Corrective action - PIC advised to store all food items at least 6 inches above the floor on racks or shelving units. Food Storage. 1. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor. 2. Food in packages and working containers may be stored less than 6 inches (15 cm) above the floor on case lot handling equipment if the equipment can be moved by hand or by conveniently available apparatuses such as hand trucks and forklifts. 3. Pressurized beverage containers, cased food in waterproof containers such as bottles or cans, and milk containers in plastic crates may be stored on a floor that is clean and not exposed to floor moisture.
Food stored covered — Inspector Note: Observed several containers of spices and sauces stored uncovered near cooking equipment in the main kitchen area; containers of noodles stored uncovered in reach-in cooler. Corrective action - PIC advised to provide lids or other covering for containers unless food is being actively dispensed. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination;
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed pink and black matter on the interior of the ice machine in the main kitchen area. Corrective action - PIC advised to have interior of the ice machine cleaned and sanitized. Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination;

Corrective action - PIC advised to store all food items at least 6 inches above the floor on racks or shelving units. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor. 2. Nonfood-contact surfaces clean — Inspector Note: Observed buildup of dust and grease on vents under hood. Corrective action - PIC reported that hood vents are due for cleaning by cleaning company soon and will be cleaned appropriately at that time. PIC advised that cleaning frequency for hood vents may need to increase. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Physical facilities installed, maintained, and clean — Inspector Note: Observed buildup of debris and greasy residue on floors and walls near cooking equipment. Corrective action - PIC advised to perform detailed cleaning of floors and walls in main kitchen area. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed build up of food residue on blade of can opener mounted to prep table in main kitchen area. Corrected on site - PIC relocated can opener to warewashing area for cleaning and sanitizing. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
