Food properly labeled; original container — Inspector Note: Observed several food containers (squeeze bottles and metal pans) without any labeling on throughout the kitchen. CA: Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed during the routine inspect a bottle of orange soda housed in the RIC of the main kitchen. The soda was housed with food that will be sold to customers of the hotel. COS: the soda was discarded by PIC. Designated Areas for Employee Activity. 1. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed a can opener with heavy amounts of buildup on the blade, dirty knives stored on the magnet wall rack along side clean kitchen knives and several containers with old stickers stored on a rack along side other clean food containers. CA: (a) Equipment, Food-Contact Surfaces, and Utensils. 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
Proper date marking and disposition — Inspector Note: Observed during the routine inspection a metal pan of chicken inside the walk in cooler without any labeling and date marking on the pan. COS: PIC discarded the chicken in the pan. refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days.
