Thermometers provided and accurate — Inspector Note: Observed multiple reach in coolers in the main kitchen without thermostats to monitory the internal ambient temperatures of the cold holding devices. CA advised PIC to place a thermostat in every reach in cooler in order to be able to monitor adequate cold holding temperatures.

Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed an outdated food service inspection posted for public view. The most recent inspection must be on display in a location visible to the public. CA advised PIC to remove the outdated inspection report and place the most current one in a location visible to the public.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed dish washing machine not properly dispensing sanitizer. Test strips indicated 0 ppm sanitizer during the time of inspection. CA advised PIC to discontinue the use of the dish washer until repaired or adjust properly to dispense sanitization. Advised to use the 3-compartment sink until it is functioning.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed mold like residue and build up on the interior surfaces of the ice machine. CA advised PIC to clean and sanitize the interior surfaces of the ice machine and to maintain a routine cleaning schedule in order to prevent the accumulation of build-up.
