Food separated and protected — Inspector Note: Observed raw chicken stored above pork and raw beef in walk in cooler. Advised PIC on proper storage and provided storage chart.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed heavy accumulation of black mold like build up on the interior surfaces of the ice machine. Food contact surfaces must be clean to sight and touch. CA advised PIC to immediately clean and sanitize their ice machine and to establish a routine cleaning schedule to prevent build up.
