Contamination prevented during food preparation, storage, display — Inspector Note: Observed food thawing in the three-compartment sink creating a potential risk for contamination. CA advised PIC to discontinue thawing food in the three compartments sink.

In-use utensils: properly stored — Inspector Note: Observed ice scoops being stored directly in ice in the bulk ice machine and bar ice bins. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: 1.Except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container; 2.In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon; 3.On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized at a frequency specified under DPH Rule 511-6-1-.05(7)(b) and (8)(a); 4.In running water of sufficient velocity to flush particulates to the drain, if used with moist food such as ice cream or mashed potatoes; 5. In a clean, protected location if the utensils, such as ice scoops, are used only with a food that is not time/temperature control for safety food; or 6. In a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi). PIC had the ice scoops removed.

Insects, rodents, and animals not present — Inspector Note: Observed multiple flies in the main kitchen area. CA advised PIC to implement effective pest control measures and eliminate conditions that may attract or harbour flies.

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed main kitchen hand sink obstructed with several brooms blocking access way to hand sink and scrubber and other items stored inside the hand sink. Advised PIC the hand sink shall be easily accessible at all times. COS- PIC removed brooms and scrubber and other items from hand sink.

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed clean food contact utensils and containers stacked while still wet preventing proper airy drying. CA advised pic that all cleaned and sanitized utensils are allowed to completely air dry before storing them.

Proper cold holding temperatures — Inspector Note: Observed multiple TCS food items in several reach in coolers in the main kitchen being held above the required cold holding temperature of 41 degrees or below. CA advised PIC to voluntarily discard the food items and to adjust / repair all cold holding equipment in order to maintain proper temperatures.
