2 recorded inspectionsUtensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed multiple food service containers in the ware washing area of the main kitchen not stacked in a manner that encourages air-flow for drying wet utensils. CA: Advised PIC to stack food containers in a manner that encourages air-flow for drying after washing.
Food in good condition, safe, and unadulterated — Inspector Note: Observed 7 dented cans in the main kitchen's dry storage area, including artichokes, red peppers, and coconut milk. COS PIC placed cans aside for credit.
Thermometers provided and accurate — Inspector Note: Observed no thermometers in RICs and RIFs at the bar. Also, observed no thermometers in the WIC, RIFs, and RICs in the main kitchen. CA: Advised PIC that ambient air and water temperature measuring devices should be provided and that are scaled in Celsius or dually scaled in Celsius or Fahrenheit shall be designed to be easily readable and accurate to ±1.5ºC in the intended range of use.
Insects, rodents, and animals not present — Inspector Note: Observed multiple fruit flies in the bar and the main kitchen. CA: Advised PIC that the presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; 3. Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; Pf and 4. Eliminating harborage conditions.
Food in good condition, safe, and unadulterated — Inspector Note: Observed 11 dented cans (5 containing artichokes, 5 containing coconut milk, and 1 containing chipotle peppers) in the dry storage area of the main kitchen. CA: Advised PIC to set cans aside and dispose of them or only hold them for credit.
