In-use utensils: properly stored — Inspector Note: Observed an ice scoop stored handle down in ice. PIC washed the scoop and put it in its proper place
Food properly labeled; original container — Inspector Note: Observed that the dry goods bins were not labeled. CA - PIC will use a sharpie to write the common name of the ingredients on the bins.
Contamination prevented during food preparation, storage, display — Inspector Note: Observed chicken stored on the floor of the walk in cooler and bread and other food items stored on the floor of the walk in freezer PIC moved the food of the floor.
Single-use/single-service articles: properly stored, used — Inspector Note: Observed an old chicken and egg boxes reused to hold vegetables and bread. PIC removed the food from the boxes as well as discarding the boxes.
Food separated and protected — Inspector Note: Observed raw beef on the same shelf as whole vegetables. PIC moved the food to the correct areas.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed a quats solution below the recommended range of 200 - 400 ppm. PIC remade the solution.
Proper date marking and disposition — Inspector Note: observed no datemarking on food on the front food service line. CA - PIC wil implement a date marking system.
