Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed failure to clean the food prep table and cutting board in the kitchen. PIC shall clean the food residues off the table and cutting board and sanitize them as well. 511-6-1.05(7)(a)1 - Equipment, Food-Contact Surfaces,& Utensils (Pf) (7) Cleaning of Equipment and Utensils. (a) Equipment, Food-Contact Surfaces, and Utensils. 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf.
Food properly labeled; original container — Inspector Note: Observed 2 unlabeled food containers in the kitchen. I advised the PIC to always label food containers with common names. 511-6-1.04(4)(d) - Food Storage Containers Identified with Common Name of Food (C) (d) Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.
Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed that dishes and utensils were wet stacked in the kitchen. I advised the PIC that utensils should be air dried before double stacking them. 511-6-1.05(10)(a) - Equipment & Utensils, Air-Drying Required (C) (10) Protection of Clean Items. (a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
Nonfood-contact surfaces clean — Inspector Note: Observed food debris, heavy sticky grease from food all over the walls, refrigerators and the floor. Physical facilities installed, maintained, and clean — Inspector Note: Observed failure to clean the the walls, and floor. There are heavy dark looking greese and food stains all over the walls and floors especially under the 3 compartment sink, refrigerators and under the grill. I advised the PIC to do deep cleaning of the walls and floors. 511-6-1.07(2)(a) - Floor, Walls, & Ceilings, Cleanability (C) (2) Design, Construction, and Installation. (a) Floors, Walls, and Ceilings, Cleanability. Except as specified under subsection (2)(d) of this Rule and except for antislip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed failure to clean the flat top grilling. Observed sticky greese that has not been cleaned for a long period.
