Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed dark spots with the appearance of mold on the interior of the ice machine in the main kitchen area. Corrective action - PIC advised to perform detailed cleaning and sanitizing on ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
Toxic substances properly identified, stored, used — Inspector Note: Observed chlorine concentration at 200 ppm in wiping cloth bucket in main kitchen area. Corrected on site - solution diluted to a concentration of 100 ppm. 511-6-1.07(6)(g) - Chemical Sanitizers, Criteria (P) (g) Chemical Sanitizers, Criteria. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: 1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) P, or 2. Meet the requirements as specified in 40 CFR 180.2020 Pesticide Chemicals Not Requiring a Tolerance or Exemption from Tolerance-Non-food determinations. P
Toxic substances properly identified, stored, used — Inspector Note: Observed unlabeled chemical bottles stored throughout the kitchen area. Corrective action - PIC advised to label all chemical bottles with the common name of the product. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material.
Food stored covered — Inspector Note: Observed spices near cooking equipment and prep tables stored uncovered during long pauses in service. Proper date marking and disposition — Inspector Note: Observed container of cooked noodles stored in the walk-in cooler marked with a date greater than 7 days in the past (marked 8/23). Corrected on site - Product discarded. 511-6-1.04(6)(h) - Ready-To-Eat Time/Temperature Control for Safety Food, Disposition (h) Ready-to-Eat, Time/Temperature Control for Safety Food, Disposition. 1. A food that requires datemarking shall be discarded if it: (i) Exceeds 7 days, not including the time that the product is frozen; (ii) Is in a container or package that does not bear a date or day; or (iii) Is inappropriately marked with a date or day that exceeds 7 days .
Proper date marking and disposition — Inspector Note: Observed containers of soup in walk-in cooler improperly labeled with the date the product was prepared prior to being frozen, not marked with the date thawed so that time the product was held in refrigeration could be tracked. Corrected on site - PIC labeled the product with the date thawed and advised that the product would be served within the 7-day timeframe allotted in the Rule. Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 5 and 6 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1.
