Food properly labeled; original container โ€” Inspector Note: Observed most sauce bottles, including oil, and other food items not in their original containers were not properly labeled with their common names. COS: PIC labeled the containers. d) Food Storage Containers, Identified with Common Name of Food. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

Physical facilities installed, maintained, and clean โ€” Inspector Note: Observed the walk-in cooler leaking water, resulting in water accumulation on the floor and splashing onto food containers. COS: PIC moved food away from the affected area and placed a bin to collect the leaking water. PIC will have the cooler serviced to correct the issue.
