Proper cold holding temperatures — Inspector Note: Observed several TCS foods stored in the walk in cooler and prep top cooler in the main kitchen holding at temperatures above 41 F. CA PIC was instructed to ensure all TCS foods are maintained at 41 degrees or below. PIC was instructed to monitor the cold holding units and have them serviced if they are unable to maintain proper cold holding temperatures.

Contamination prevented during food preparation, storage, display — Inspector Note: Observed employee personal items stored in the walk-in cooler with food products. CA advised PIC to remove personal items from the cooler and told him that all personal belongings must be stored in a designated area away from food in order to prevent contamination.
