Contamination prevented during food preparation, storage, display — Inspector Note: Observed that food was stored on a cutting board on top of the 3-compartment sink; the paper hand drying provisions for the hand sink are on the end of/above the 3-compartment sink, so after washing hands employee would reach over the food and drip water onto the food being prepared/served. COS. Food was discarded and food prep moved. CA: Food shall be stored in a manner that protects it from contamination, such as splash.

RCA: Recommend adding a trash can in the unit. CA: A receptacle shall be provided in each area of the food service establishment or premises where refuse is generated or commonly discarded, or where recyclables or returnables are placed.

CA: Food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.
