Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device. C.A:PIC advised to get a test kit for the sanitizer and always test for adequate sanitizer concentration

Exterior doors used as exits need not be self-closing if they are: (i) Solid and tight-fitting; (ii) Designated for use only when an emergency exists, by the fire protection authority that has jurisdiction over the food establishment; and C.A:PIC told to ensure the bacdoor is closed at all times so as to prevent entry of pests and rodents
