Food separated and protected — Inspector Note: Observed plastic wrapped raw beef stored on the same tray as plastic wrapped chicken. What appeared to be water from both packages was observed on the tray. CA: PIC was advised to store and separate foods by coking temperature. PIC was also advised to separate types of raw animal foods from each other such as beef, fish, lamb, pork, and poultry during storage, preparation, holding, and display by using separate equipment for each type or arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS: Raw beef was thrown away.
