Single-use/single-service articles: properly stored, used — Inspector Note: Observed single use gloves, appeared dirty, and left on counters. Observed employee reach to put glove back on. Single-service and single-use articles may not be reused.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed hand sink in sushi area with a sanitizer bucket stored directly in the basin. Must not store anything in hand sinks and handwashing facility may not be used for purposes other than handwashing.
Proper disposition of returned, previously served, reconditioned, and unsafe food — Inspector Note: Observed what appeared to be moldy shallots and moldy ginger in walk in cooler. A food that is unsafe, adulterated, or not honestly presented shall be discarded or reconditioned according to an approved procedure. PIC discarded.
Food stored covered — Inspector Note: Observed food stored uncovered in reach in cooler across from cooktop. Must store food covered to prevent potential environmental contamination.
Single-use/single-service articles: properly stored, used — Inspector Note: Observed single use containers being used to scoop. Single-service and single-use articles may not be reused. C/A COS: PIC removed all single use containers and replaced with scoops.
